I really liked this with Bushmill's Irish Honey. It is a sweet soda drink, and flavored honey like lavender (in place of heather in this recipe) really made the drink.
1/2 tsp. heather honey
1 1/2 oz. Irish whiskey
club soda
lemon peel
Muddle honey in a little soda water until dissolved. Pour in the whiskey and add ice cubes to fill the glass. Top off with club soda. Stir gently and garnish with the lemon peel.
